This simple pineapple cake tastes very fresh. Of course you can substitute the canned pineapples with other fruits.

Recipe:
BATTER:
» 1 cup (200 g) soft butter
» 1 cup (200 g) sugar
» 4 eggs
» 2 cups (250 g) cake flour
» 1 tbsp rum (optional)
» 1/4 cup (25 g) corn flour
» 2 tsp baking powder
ANANAS BUTTERCREAM:
» 2/3 cup (150 g) soft butter
» 1 cup (150 g) powdered sugar
» 2 cups (450 g) crème fraiche (sour cream)
» 1 EL vanilla flavored sugar
» 1 EL lemon juice
» 3,5 cups (700 g) pineapple, chopped
BAKING INFO:
Baking plate with baking paper|
preheat oven
Baking temperature: 350°F (175°C)|
bake for about 20 minutes
TIPS FOR PREPARATION:
» all ingredients should have room temperature
» bake the batter golden yellow and then let cool down
» the cream is fluid at first, put the pastry into a »high« baking plate
or a baking frame to prevent the cream from flowing down
» Instead of pineapple you can also use other (canned) fruits
