How to Make Nest Thermostat Manual

How to change the settings on a Nest thermostat so that it becomes a manual thermostat and will hold a set temperature. Unlike most other thermostats, the Nest thermostat does not have a HOLD button or a hold feature so one needs to play around with the settings to be able to accomplish that which used to be done with the press of a single button on the old thermostat...
